Robin’s Easy Cornbread Dressing with Chicken Recipe

After many failed attempts and discarded recipes, I finally have a recipe that my entire family loves. I hope yours does as well!

Ingredients for Easy Cornbread Recipe

2 (16 oz) packages of yellow cornbread mix, prepared according to package directions. I use Gladiola Martha White Yellow Cornbread Mix.

1 pound of chicken (boiled and shredded; may be baked, if preferred)

3 tablespoons of butter

1/2 cup of chopped celery

1 clove of minced garlic

3 eggs, beaten

2 cups of chicken stock

2 1/2 cup of ground sage. I use McCormick brand ground sage.

Salt & pepper to taste.



Directions

Prepare cornbread mix according to package. Cool and crumble.

While cornbread is baking, boil the chicken, until it reaches an internal temperature of 165 degrees F. I highly recommend the Food Network’s article on safely cooking chicken.

In a medium skillet, melt the butter, then saute the celery, onions, and garlic together.

Preheat oven to 350 degrees.

Grease a 9 X 13 baking dish.


In a large mixing bowl:

Mix sage, salt, and pepper with crumbled cornbread.

Add remaining ingredients. Mix well.

Pour mixture into greased pan.

Bake at 350 degrees, until golden brown.

I didn’t include cook times, which differ from oven to oven, but it takes about 40-45 minutes in my oven. I hope that you enjoy this recipe! If you try it, please leave a comment!
